In a bowl, mix your different flours, coconut sugar, ginger and a pinch of salt. Make sure there are no clumps !
Add the bicarbonate soda. Pour the lemon juice and zest over it to activate it.
Melt the coconut oil in a small recipient in your microwave or in a small sauce pan over low heat.
Add the melted coconut oil and the egg to your cake batter.
If your mixture is too dry, add a little bit of oat mylk !
Fold in as many Fruit Sticks as desired.
Pour the mix into a greased cake mold. Decorate with Fruit Sticks as desired !
Bake the cake for 20-25min in a pre-heated oven at 180°C.
Let cool and enjoy with a glass of lemonade or cup of hot tea !
Our Gluten Free Flour Mix :
30g of Brown Rice Flour
75g of Oat Flour
30g of Tapioca Starch
15g of Almond Flour
1/2 tsp of bicarbonate soda
The zest and juice of 1 lemon
1 egg
50g coconut oil or vegan butter
50g of coconut sugar
1/2 tsp of powdered ginger
1 pack of N.A! Lemon and Ginger Fruit Sticks
1 pinch of salt
Optional : a little bit of oat mylk
